Oral medicine is a specialist area of dentistry in the diagnosis and treatment of oral disease and oral-facial pain, which includes temporomandibular disorders. A/Prof Stubbs is the academic lead at Latrobe Rural School of Health in the field of Oral pathology and Oral medicine teaching undergraduate dental students. 

A/Prof Stubbs has a particular interest in the specialist field of dental sleep medicine, an interesting area in the making of dental devices to treat snoring and obstructive sleep apnoea. He has worked in both treating of patients and teaching of other dentists in this field for the past 19 years. 

Current outside work interests include the support of Victoria Opera and other community based charities.
